I second the Clouldland Canyon. Typically about 10-15 degrees cooler that lower elevations. Very Clean, nice trails and just close to Chattanogga.

Lots of good places mentioned so far...
Boggs Creek area hasn't been mentioned - off Hwy 129 north of Cleveland (don't recall if its north or south of Neel's Gap...want to say north). Andrews Cove is another possibility just above Helen on Hwy 75.
Blackrock Mountain SP near Clayton is another possibility. Like Cloudland Canyon you gain some elevation on the surrounding area and its a bit cooler. They had some storm damage a couple months back but I think the campground was OK. Best to make a call first though...
Labor Day weekend will be tough. If you can wait a week you'll just about have the woods to yourself the next weekend.
Boggs creek has been closed since the bad storms came through and knocked over all the trees in that area. I was just there yesterday.
