I would be cautious with going the sock route; most covers for bikes and ATVs are vapor barriers (actually, I think all are, but I'm not as knowledgeable about them as I'd like to make that claim). Vapor barriers make good undercovers for most folks since water vapor tends to rise with warm air, but as a totally- (or even mostly-)enclosed sock, it would tend to make for a lot of condensation in your insulation. Which is not good, especially if you're using down.
To answer your initial question: no, I've not used one as a sock. However, with the caveat mentioned above, I'd be happy to hear the results of trying one out!
^^ What FL said although I haven't tried it either. I would think it would not be a good choice as all of the ones I've seen are not only vapor barriers, but also heavy and bulky.
I already tried it for a neighbor - don't do it as you will sweat and or have lots of condensation.
