I fit my safari and hex fly in one set of large skins. It's snug, but if you roll it right, it goes pretty easy.
I use the stock Hennessey set up. It's fairly quick, very simple, and works well.
I've heard rei carries Hennesseys, but as we don't have rei in Alabama, I can't say for sure.
If you don't mind the weight, I suggest the HH Safari. It's huge, easy to set up with the built in ridgeline, and the asym tie-outs give a very flat lay. I'm 6'2" 225# and can sleep on my side or...
Weight doesn't bother me much. I usually camp from a canoe or atv.

Yeah you should be careful with abrasion. I only use the teeth of the figure nine to hold the rope while making adjustments. When I get everything set, I tie a couple half hitches through the biner.
