One of the things I really like about the better hammocks is being able to sleep fairly flat. Can you sleep diagonal with a peapod or are you pretty much in-line?

Pretty much as rated for bottom warmth(for me). So that is probably 20*F ON BOTTOM. Naturally, all according to the individual. Cold sleeper? Warm? In between? Also that is assuming good wind/water protection, of course. I have done 11*F under benign conditions with the addition of a space blanket below me in the Pea Pod.
Top warmth is trickier. I think the admitted cold sleeper Ed Speer only rates it for 50F by itself on top. This will, IMO, vary with the hammock. A Speer or most wide hammocks will hold the hammock above your body, decreasing the warmth even though it is 2.5" loft top and same on bottom. A more narrow hammock probably will allow it to lay close to your body, maybe even in contact with you. Then I think it starts getting pretty close to same as bottom warmth. But something to consider is: If it has a gap on top and is 2.5" above your body, and you fill that gap with 2.5" of top quilt, then how warm is that 5" total TOP loft? Pretty darn warm I think!
No dif with diagonal for me. But if you are really closed up, it is quite a different feel width wise, and as far as an wide open feeling. Can't find the words here. IOW, especially if you are pretty wide, it might pop open, especially if you put your hands under your head. If you have a top quilt or clothing filling the gap, you probably wont have it close all the way any way. And if you do, it's going to be WAY warm. But basically, no problem on the diagonal for me.
