I pack some camera gear and try to capture good nighttime timelapse footage if I am far enough away from light pollution
Practice wilderness survival/bushcraft skills like starting a fire without matches, building snares, and tying knots, etc. If I get board of that, then I'll probably go exploring around my camp and take photos or gather firewood.

Read, photography, eat again, games on a smart phone, listen to music, hackysack, solve world problems.
I've been on a few backpacking trips so far. The thing is, we never have a few hours to kill at the end of the day. We hike all day, and by the time we set up camp and eat, it's dark or really close, and we're tired so in the hammock and off to sleep it is. Maybe one day we will face that dilemma, but it just hasn't happened yet!
