    For those who requested or asked about the recipe for the Mahha Meatballs I made here it is. I am glad everyone liked them. In the fall I guess I will have to make 200 or so. I lost count as I was rolling them but think it was just over 60 or so. Also those that were there, I used triple portions to make the amount for the Mahha.

    Ingredients:

    One roll Jimmy Dean Italian sausage
    8 to 16 oz Shredded mozzarella cheese (fat free, 2%, light, doesn't matter but I prefer 2% or regular. also I usually buy the pre-shredded kind and brand that is on sale)
    Shredded spinach ( you can use fresh but frozen is what I normally use so I can multi-task cook)
    1 to 2 eggs
    1 to 2 cups Italian bread crumbs (approximately)

    Preheat oven to 350* and start the process below. You should be close to done the prep by the time the oven is hot.

    Take a large frying pan and .25" or so of water and parboil the sausage. Break it up as you add it to the pan. Use two spatulas to break up/chop the sausage in small pieces (size of a BB or up to maybe twice that size). You want the sausage diced finely as it make rolling the meatballs easier.

    I add some garlic powder (my gf reacts poorly to real garlic or other wise I would use real), some Oregano, some red pepper flakes or cayenne pepper powder (personal choice which you add and I do change it up from time to time, the Mahha meatballs had cayenne but only a touch). Continue to cook the sausage until most of the water is cooked off. The sausage should be cooked all the way through due to the the small size of the pieces. Drain away any water or fat left in the pan and pour into a large mixing bowl.

    This is the intuitive part, add the cooked spinach and mozzarella cheese to the bowl of sausage, I put it in using small handfuls. I don't use more than a 1/4 of a box of frozen spinach per roll of sausage. I go heavy on the cheese about 8 oz per roll of sausage. Add as little or as much as you like but I have been making them long enough now that I just know how much looks right.

    Now you add an egg and some bread crumbs. I don't measure the breadcrumbs I just mix them in as a binding agent so it is more about consistency. If you have ever made meatloaf or meatballs you will understand. You may have to add another egg if it is too dry (due to too much breadcrumbs being added). Mix with a fork until you achieve a consistency that will allow a meatball to be rolled.

    Roll meatballs or you can make mini-meatloaves (3"long x 1.5" high x 2" wide or whatever size you want). I find the small loaves fit perfectly on an English muffin for breakfast or lunch.

    Bake for about 20-30 minutes. You want the cheese to sizzle. All ingredients are cooked with the exception of the egg. All baking is doing is cooking the egg and binding the meatballs. Serve to hikers/campers that have been having dehydrated food for a day or two and they go over really well.

    This years hang brought many new or fairly new hangers to Gathland. It was cool to see how everyone is helpful and willing to share their knowledge with those just starting out.

    Thanks to all for the great food, shared skills, and fine camaraderie. There were so many innovative ideas this year as well. I expect the fall hang to show us more fine ideas.

    BTW, the burger flipper was stolen from "prior art" and for emergency use only!!
