    Two quarts of salsa verde cooling in the fridge. I can't tell how spicy it is because I guess I'm a little immune to habanero peppers. Anyway, the salsa verde will have a chance to marinate overnight so the flavors will be well blended.

    Ingredients

    2 lbs. roasted tomatillo
    4 roasted jalapeno peppers
    3 roasted Scotch bonnet peppers
    1 roasted Habanero pepper from my garden
    1 White Onion
    1 Bunch Cilantro
    8 cloves garlic (4 roasted with tomatillo, 4 raw)
    Juice from 4 Limes
    Black pepper
    Salt
    2 tablespoons peanut oil
    1 tablespoon olive oil

    I thought about throwing a Ghost Pepper from my garden in, but Ghost Peppers can be a bit unpredictable so I skipped it. The salsa verde will taste great on pulled pork, and will go nicely with breakfast as well.

    My wife thought I made the salsa verde because her cousin is coming to visit this weekend. Silly girl.

    It's going to be a cold one this weekend but I think I'm ready! 20 degree underquilt and 15 degree down mummy bag on top of clothing layers. I'm so excited to hang with new random people from the internet. I should be rolling into camp around 8PM at the latest.
