Just get a quality set of LIGHT 26in MTB rims and put some of those tires like bike cops use that have the continuous center ridge, sort of like all terrains for a MTB. Just pump 'em way up and it'll roll a lot smoother on the pavement, if you aren't climbing a lot you won't tell much difference.
You can get 1" wide road tyres that pump up to 100psi for 26" rims.
I use to race my mountain bike in road time trials with these, and I used to beat nearly all the 'Roadies'. They hated it.
If you get new road rims make sure they are the same width as your MTB rims or you will have to make brake adjustments every time too, unless you have discs. Like Take A Knee said there are many hybrid tires out there, you might even find one that can do both for you depending on how "off road" your off road riding is. I am a bike Cop too and we have used many different hybrid tires on our bikes with great success.
I have hybrid tires on my bike. Not real aggressive for trail use but I don't do that anyway. They roll real smooth. My bike is stored or I would check the make and model. +1 on the rim width. If you want to swap quickly and easily you need to keep the same width. Unless, as said, you ride disc brakes.

Hi, no advice on road specific rims, but I've used IRC Metros on a mountain bike and they were surprisingly good. I think they were about 1.25 inch and went to 100 psi. They were terrific for going up and down gutters and were fast enough to pass roadies. Obviously not as efficient as a road bike but surprisingly close. They were the regular Metros and not the heavier "Duro" model.
