I had a hard time figuring out how to do the flat bottom, but then my aunt showed me the "dog ears" method which really simplified it up for me. We made button holes after sewing the channel all the way around, that way the sack can completely seal.

Way to go. The DIY bug strikes again. Thru-hiker and backpacking.net both have tips on stuff sacks and other gear if you are planning on making more.

I personally like to do the button holes before I sew the channel. If I use the button hole technique that is.
I may be slow... But I sure am gimpy.

PrimaLoft is much easier to work with, but down is much lighter and more compressible for the same temp range. So it kinda depends on what you're making.
E.g., in a small summer quilt, a lot of the weight will be the shell material. For PL, you just sandwich it. For down, you sew additional seams and sometimes baffles (more material). In the end, there won't a whole lot of weight savings. But for a winter quilt, where a bigger percentage of the weight will be the insulation, down makes a huge difference.
How each fits and lays will matter, too. This probably makes a bigger difference for insulated hammocks than for anything else.
