    Mile High Salsa Bake

    For each Dutch oven:

    Ingredients:

    3 lb. ground beef
    3- Old El Paso Burrito Dinner Kit (contains tortillas, rice and bean mixture, and spices)
    3 - 8 oz. Colby/Monterey Jack cheese, grated (or your preference)
    3 -16 oz Salsa (Old El Paso Medium)
    1 – bag tortilla chips
    1 – 16 oz sour cream



    Directions:

    Brown ground beef and drain grease
    Add all of the bean/rice seasoning packages from the 3 Burrito kits to the beef
    Add water per directions
    Heat to boiling
    Cut one package of the tortillas into strips. The other two packs will be surplus.

    Layer as follows in the dutch oven
    -Tortillas
    -Meat mixture
    -16 oz jar of Salsa
    -8 oz Cheese

    Repeat until it’s gone with a heavy layer of cheese on top
    Should have 3 layers
    Bake for 20 minutes with 6 - 8 coals on the bottom and 12 -15 on top
    Serve with sour cream and chips

    Feeds 10-12

    Just for simplicity's sake at camp, I cook the beef mixture at home and pack it in three qt. size freezer bags. Then at camp, all you have to do is layer the ingredients. One bag for each layer.

    It's also one of my favorite backpacking meals. The burrito mixture dehydrates and rehydrates very well, as does the salsa. Throw in some cheese and wrap it in a tortilla.

    That's a standard 12 inch, 6 qt. oven. That particular dish only had 2 layers instead of 3. If you'll notice in the picture, there was room at the top for more.
