I had a discussion on this very issue with my wife the other day. She was a professional seamstress for years. She makes a flat felled seam by lining the edges of the fabric up evenly and sewing them together once. She then trims off the seam allowance that will be folded inside. leaving enough so the seam is stable. Then she folds once essentially using the stitch line as the fold line Then she folds again and stiches either at the inside of the fold seam or double stitch inside and outside edge. Not being the seamstress she is is I always stitch the first fold, fold again and double stitch.
This serves two functions depending on what you want to focus on. For you gram weenies, it reduces the weight of the seam. For the rest of us... and the gram weenies, it makes the seam more pliable and flexible without reducing its strength. For curves and arcs it means a smoother, sleeker tension line.
