Water bottle is always under the quilt with me during cold weather hangs.
Edit: I just realized you were asking about Underquilts. I wouldn't. The weight of the water bottle will pull the UQ down and create a gap between the quilt and hammock; otherwise known as a "cold spot".

Do you mean between the hammock and underquilt? I would not recommend that.
