Is needle size a concern for sewing baffles to a down quilt? or is that overthinking a little.
I'm starting one now as soon as I figure out how I'm going to measure out my down that just came in.

I'd use the same size needle you'd use for the material for the shell.
No, size is not a concern for sewing the baffles to the shell. The bigger issue is to match the needle size to the thread to the thickness of the fabric. Other than when making box stitches in webbing for tree huggers I use a small needle for everything. The biggest problem I've had with small needles is the quality of the thread. Some of the large, cheap cones have thread that is inconsistent. Watch the thread as you spool a bobbin. Sometimes you can see clumps go by. That's a bad sign and a guarantee that a bird's nest is on its way.
i suggest using a small needle, i use a 9. Small needles leave small holes, big ones leave big holes. Down tries to get out through every hole possible, small needles reduce the amount of down that can escape, of course higher quality down with less feathers isn't really going anywhere either way.
