It's probably because you're cooler/colder in the hammock than at home in bed. Same thing happens to SCUBA divers when they hop in the water. It's almost always cooler than the air temperature.
It's an effect called Diuresis. I don't know physiologically what happens to cause it, but I know the cause is exposure to cold and in the case of divers...submersion.

Those who expect disappointment are never disappointed.
What I'd really like is something that collapses so that it doesn't take up space in the backpack but that would also increase the chances of it spilling into the hammock. Picture a full wide mouth hydration bladder set down on something with the lid open.
I've seen sports bottles on Ebay that collapse with some accordion style folds but I'm dubious of their durability. I suspect one of those seams will leak sooner or later.
I just haven't come across anything suitable yet.
What we generally do is hydrate on the way to the TH with a gatoraid in my vehicle and tote the empty bottle along just for this purpose. Its solid, light weight and most of the time its a good size. Unfortunately it takes up room the whole time, even though you only use it at night.
The cold thing is interesting. Might be another reason to up my insulation.

I am not peeing in my hammock into any gatorade bottle - I'll just get up and go in the bushes. I've got my headlamp with me anyway; I like to read a little before sleepy-time.

The reason for having to go more when camping is due to the fact that you are colder, your body begins to try and get rid of excess water that it is trying to warm. Less strain on the body. So you are correct that if you are warm you do not go as much at night as someone cold.
