I voted foot end higher. But, that is for my gathered end hammocks only. For my JRB Bridge it is just the opposite, head end higher.
I voted for level. I like a fair amount of sag and the I've never really noticed any difference with having either head or feet higher than the other. Thats just me and that is the nature of hammocking. Its a lot of feel since we are all different.
Don't let life get in the way of living.
I'm not sure what it says about me NOT being top heavy (sigh), but I like level. Feet higher and my feet just get numb, I don't slide.

When I was setting it up level, I found I tended to slide towards the head end during the night.
Now I set the head end visibly higher than the foot end (? ~ 6" ?) and I don't seem to slide towards either end.
You probably should have asked a more specific question to distinquish between a gathered end hammock and a bridge hammock.
