What are the benefits of a custom top quilt? I'm 5'5" 150 pounds. Most regulars are made for someone 5'10", so does that five inches make that much of a difference?

You've got my girlfriend beat by 3"!
In her case, she didn't like the custom quilt I made her as much as she liked a standard length quilt. With the regular quilt, she ends-up with the quilt kind of bunched-up. That equates to more loft and more warmth. It's what I get for picking a Florida girl; under 80° and her teeth chatter.
It saved some weight making her one sized to fit, but she'd prefer the extra warmth the longer one provides her.

actually the hammockgear.com short burrow is cheaper than the regular. You just have to ask for it.
I'm 5'4" 155lbs and I have a regular and a custom short. No difference in comfort one just fits a bit more better and is a bit lighter.

I'm 5'5" and 155 lbs and I have a te-wa custom made quilt but I had it made at regular dimensions and it works great for me. You could get one a bit smaller and save some weight. Either way I think you would be fine. No problems using a regular sized quilt though.
To add to what Raul said, you could get the short, keep the same amount of down as the regular and have a better fit quilt that will go to lower temps for the same price as a regular. I'm a cold sleeper and I wanted a shorter quilt but one that was a bit warmer. Hammockgear.com made my quilts to order. All depends on what you want.

That's what I did when I made one for my wife. I made one for myself first (made all my mistakes on mine, too), and because she's a cold sleeper, I used the same amount of down in hers, but made the dimensions smaller to fit her better. Worked out great.
