also alot depends on how well it fits (how tightly it hugs the hammock without having spots that hang loose) a quilt with a snug fit will be much warmer than one without all other things being equal, fit is at least as important as the amount of insulation used.
So then I guess the question is with a down quilt, is snugness accomplished with the design of the quilt, or with how its rigged to the hammock?
If you get a well-designed quilt, then you should be able to rig it to your quilt with little fiddle-factor. Generally I just attach mine at both ends, tighten the ends a bit and I am set for the night. With a poorly designed quilt (or one not designed for your hammock) you will need to spend a lot of time fiddling around to get the UQ tight against the bottom of the hammock.
That said, the cottage industries talked about with this site usually do a great job at making quilts that work well under most conditions. And their temp ratings seem pretty accurate as well.
