So I switched it back to the channel method but don't like the floppy sides. It makes the hammock feel smaller and there isn't much support to lay my head anywhere. Is there a remedy for this?

Without putting any weight in the hammock, try pulling the ends of the channel tighter. You should see the edges tighten up.
You can close up the channel slightly at the ends by running a couple rows of stitching at an angle. This will tighten up the sides a little bit. If the sides are way too loose, you may not be able to gain enough to compensate.
I don't understand what the first part you said is. I'm trying to understand it but I'm a visual guy - or a dumb one. lol
It seems that now that I've got my hammock outdoors (as of today) and the distance between posts is farther, the edges seem a little better.

+1 on what papasmurf is saying. Also, (back on the "strength" issue) I fold over the tiniest seam I can first (I iron, but I know a lot of others don't like to bother) Then, I fold over a TWO INCH seam. Then, I fold that two-inch seam IN HALF and sew that down, creating my channel. That way, the channel is made of TWO layers of hammock fabric.
