Hi Lepmeister.
Here is a little video from my last outing where I pack hammock and uq while still connected. I try to fold the bundle in the middle like you do, but have to give up and stuff it in to the pack from one end.
This way of packing my gear is now my preferred method.

I have a golite jam pack that really has no structure to it. I put my OQ and SS in one large Eagle Creek compression bag and use it to make a circular "frame" on the inside of the pack. This weekend I am going to take the medium bag out with my clothes in it (I would really like a small one but do not have one yet). I use a DIY bisop bag for my hammock and Snake Skins for my tarp. I have to say my bag packed really well this time. Lots of extra room in such a small pack due to these EC compression bags. I think they add about 4oz to the overall pack weights for both bags. Anyway I really like these bags. They help you save room, the air is easily removed from the bags through one way channels at the bottom of the bag and your clothes and down is sure to stay dry. I made a stuff sack shaped to fit my pack (12" wide, 9" deep, D shaped) for the top quilt and underquilt combined. I have the tarp and hammock in their own stuff sack with both stored near the top so they are easy to get to. Sometimes I am setting up in the rain and having the tarp handy keeps everything dry. Other times a nap at lunchtime makes for a soothing hike.

I put my extra clothes in the bottom of a garbage bag, then add my TQ and UQ and roll and fold the top of the bag. After that, it's my food bag which also holds my personal gear, then I top it off with my hammock, suspension and tarp (in a stuff sack, but not compressed). The I close my pack (Granite Gear Virga, really just a big sack) and put my bladder on top.

I like to set up my hammock as soon as I get to camp, takes about a minute including opening the pack thanks to whoopies (!) and because setting up the underquilt takes even less time, I've never seen any advantage to packing them together.

I have a Golite Jam and the only thing that goes in stuff sacks is food and cooking gear (this makes it easy to bear hang in camp) I use a sea to summit dry bag inside the Jam and the whole hammock,quilt,under quilt gets stuffed in. if the tarp is damp then it goes outside the dry bag.

I have found this makes everything fit in nicely with no holes that you get with lots stuff sacks
