    A seal-a-meal is a wonderful thing. I made some soup two days before we left and then sealed it and froze it solid in the garage freezer. It served as the ice pack for the first day of the trip and then was opened and reheated for dinner on day two.

    It's a really easy soup to make.
    1lb of ground beef
    1 can pinto beans (not drained)
    1 can of corn (not drained)
    1 can of tomatoes (not drained)
    1 packet of taco seasoning mix
    2 cups of water

    Brown the ground beef and drain off the grease, add taco seasoning and other ingredients. Simmer for about 30 minutes. Garnish with shredded cheese and sour cream if desired.

    Yum, I may make that for dinner this week! I bet it's good with cornbread fixed in a dutch oven!
    Good idea using it for the ice pack. Check into the Polar Bear Coolers if you want a cooler that can keep in high temperatures. I have one and it Rocks!

    I'm sure it was a LOT cooler on the river than it was in Sarasota! Ya know you could have come along. We would have shared our trees.

    Thanks LD for the kind comments. Wish we could of gotten you down here for this trip. Maybe next time. Got the trailer done just in time to christen it on this trip. We thought about storing the boats on it, but the florida sun can be brutal on the plastic even if you keep em covered.

    I know what you mean, I'm going to have to come up with something as the leaves fall here to keep the boats out of the sun. A tarp will just deteriorate and blow away probably. I'm visualizing a Lean-To against my Yard Barn.
