Crater Lake is very pretty in the snow, and snowshoeing around the edge is fun. However, having a fire might be a problem, I have not checked with the park service about their Winter policy.
Closer to pdx, there is always something in the Salmon Huckleberry wilderness near Mt Hood.
If you want Winter, but no snow, there might be something in the coastal range, closer to the ocean. I can look up the trails if you like.

might i suggest the salmon river trail.

zigzag oregon. trail boasts good hang spots not far in.
there is also free dispersed car camping along the river too- which
might be nice for those testing gear. day hikes galore along the river.
easy scout mission too gary.
