Most tarps with doors are actually cut so that the bottom edge of the tarp is longer than the ridgeline. With the right combination of tie-outs and cat cuts, the extra material forms the door.
I have a 10x12 cat-cut rectangular tarp from OES, and I can rig that so it has doors. I just use the tie in points that would shape it more like a hex tarp, and the excess material can be staked down or tied together to form the doors.

Some do, some don't. Some depend on the way you rig the tarp, others like the Superfly that I have and use do have actual 'doors' than can overlap or not depending on the angle of your tarp setup.
