I had a used fleece blanket that I have converted into a underquilt, does anyone have any recommendations for going down into cooler temps? I have a pad that I could put in between the fleece and the hammock but not sure if it will work.

Some people really like pads. I'm not one of them.
Things like the PLUQ are quite popular and get good reviews from the DIY/Budget crowd.
I'm very pleased with my Shamu IX Underquilt, down to about 40Fdeg. If you expect to be out much below that I would recommend a real UQ, and nothing (absolutely nothing) compares to the magical goosey goodness. (it's worth every penny)
Now, for a cheap, addition/modification to your fleece UQ you could add a layer of Insulbrite. This will noticeably increase the warmth, but it will be bulky.

I have a sleeve with fleece on one side and nylon on the other that hold a foam pad. I find the fleece provides a better surface to sleep on as it ventilates a bit. I do not think fleece is a good choice under a hammock due to weight and porosity. I might add some to my Hennessy setup in the form of spare clothes flat in the undercover.
One disadvantage to using fleece from personal experience is that if it touches the ground it is a trash magnet. My first rig used fleece for top quilts and worked for keeping me warm and I still use fleece in one layer of my 3 layer TQ but it does require care and attention.
Most of us end up poorer here but richer for being here. Olddog, Fulltime hammocker, 365 nights a year.
i have a fleece UQ & TQ that i use during the warmest part of summer.
the coolest i have used it was the mid 50s and i felt a little chilled.
my fleece UQ does not stop wind very well so i use my UQP with the fleece for coolish
or windy hangs.
my fleece season is from June-August.
i haven't tried a pad between UQ and hammock, i don't think i could keep it in place?
Did not catch that you already made it the first time. The first thing I would add is an over cover sewn on the outside to block wind and help with the trash collection.
