I have some extra dyneema Tech Line from DIY Gear Supply. 1.9mm: 480lb break strength and 1.2mm: 285lb break strength. Are either adequate to use for a structural ridge line?

Either would work, but the 1.2 is at the low end of what I like, depends on the angle of the hang

the strength is 500 lb for 1/16
I think you'd be safe with both. 1.75 zing-it is quite popular and I believe that its breakstrength is around 400.

It depends. (That really answered your question, didn't it).
If you use the ridgeline as a measuring tool to get the right sag in your hammock, then 1.2 techline is more than enough. That's because you don't put any more tension on the line than what is needed to keep it taut.
Then again, if you use the ridgeline to hold your hammock up between trees that are 30' apart, you had better go with amsteel and hope that you don't pull the trees over on top of you!
