The GT UL is really a small single hammock. Most don't even like really laying in them, although some do. You should be able to lay on your side in any double with your ridgeline set at 83%. IE: the Eno DN or even the tableclothesfactory.com 60" wide crinkle taffeta will work...at 11' long at least.
As a fellow side sleeper include me on the sag and SRL bandwagon, please. If tweaking the sag and adding a SRL still don't work, an ENO DoubleNest is a cost effective "Plan B". I don't have any trouble getting a good diagonal flat lay in mine. I tend to end up at about 45° to my right or left and not a full on side lay anymore.
If it's stupid but works, it isn't stupid.
I side sleep and flop diagonals back and forth in my DangerBird72. It too is 11' long and wider than yours but I don't use the width other than to enjoy the cavernous feeling inside! You'd do well to make yourself an adjustable ridge line and experiment until you find your comfort zone. I was surprised how an inch or two would make a noticeable difference. It got old with all the adjustments, but the restfulness of a 'proper' flat lay was worth it. PapaSmurf must have a magic formula as this DB72 is wonderfully comfortable with a generous "sweet spot" diagonal for flat lay. It's worth the discovery.
I'm a side sleeper too........no issues in my Hennessy U/L Explorer,
but I won't pretend it sleeps the same as our bed at home, just something you adjust too.
Just make sure you have something to lay your head on (pillow or spare cloths in a TQ cover) or you'll get a crick in your neck.
As others with far more wisdom than I have said, play around with the angle of the dangle & an adjustable ridgeline.
Experiment...and you'll be snoring away in the land of dreams in no time.

I've had good luck side sleeping in several different hammocks: GTUL, a BMBH, and in a big Byer Cotton.
The Ultralight is my go to...
