The conversion is pretty simple, especially if you are not trying to recover any down. Just mark where you want the seams, sew two rows of seam about ½" apart from each other, then cut between the seams. Either roll a hem or add grosgrain for edging. All done, quick and easy. Now, if you want to recover the down from the removed portion of your bag, that is another story.
This was one on my first major DIY projects and the seams are less than perfect, but very functional. This is what mine looked like after completion:
I could be wrong but I suspect most of the down could be shaken into the middle part of the bag before stitching. That would leave little left to try to recover.
That was my original plan with my conversion, but the way the baffles were spaced and the location of the seams on the bag prevented that. I recoverd the down from the zipper draft tube and the hood and made a pillow and a Black Rock Clone Hat out of it. On other designed bags, that is the best solution.

What conversion? I just open the zipper and leave it open. Works for me.
