Cut the ll ft. then fold it over to ten ft. whip from there and test it out you can always cut that after u try it.

I am 5'10" 185lbs... And I love 11' hammocks... But everyone is different... If its just a knotted gathered end you can always shorten things up a bit... But if its a sewn end your kind of stuck without permanent mods...

I have found that with an 11 ft long x 62 in wide hammock there is no need for an asym cut. I'm 5'9" and get a great, flat diagonal lay. I've made some at 10' 6" that come close, but am really comfortable at eleven ft. Also, the Knotty mod is a quality addition.
Love is blind. Marriage is an eye opener.
The length of the gathered end hammock is only one factor in the comfort. There are plenty of comfortable 9' hammocks. Even shorter ones.
Don't forget that the longer hammock will require a longer, heavier, and more expensive tarp, too.
If there were some breakthrough in design or engineering that made longer hammocks possible only now I would think that longer is likely better. But, that hasn't happened. If longer were necessarily more comfortable, they would long have been available.
While the 10 ft may work, all else being equal, you'll be more comfortable in a 11 ft model. I'm only 5' 6" and can tell the difference in comfort between a 10 ft and 11 ft hammock.
11ft was the way to go for me and many others... I'm 6'1
I am about 6 foot tall and this has been my experience. I nearly gave up on hammocking until I at last gave an 11 foot hammock a try.
Hammocks were always comfortable but not in the long run. I'd wake up later in the night and found it difficult to get back to sleep. The sweet spot was narrow and more like a deep V shape on the shorter wider hammocks. Also after hiking all day my heals would be sensitive and sore to any pressure. Especially if they layed against each other. Just could not move the feet about to find a comfortable spot and keep them there.
Then came the 11 foot hammock. For me the flat lay area is more wide, easier to find and stay in. No calf pressure from the fabric. My feet can be placed appart and they stay put. I find I dont have to prop up my knees with added support. Best of all I can sleep through the night and often later in the morning. With a ridge line the length required under the tarp is fixed and my 11 foot tarp provides plenty of coverage.

I'm 6'3" (220lbs) and my diy hammocks are around 10.5' long, I tried one at a little over 11' and didn't think it was any more comfortable so I got rid of the extra fabric. However one of my hammocks is a little wider (67') and is slightly more comfortable, although it is a heavier fabric, 2.2oz rs compared to my other 2 1.4oz rs hammocks so that may be where the difference is. I have not yet tried going shorter and narrower. Everyone is different.
