Is this done just for the added weight support or are there other reasons for double layering a hammock?

Generally there is an opening between layers to insert a CCF pad for insulation.
Its mostly a support thing, but the benefits are a sandwich layer to put a pad - which some love, but I find dubious - and then also greater protection against insect bites on your backside through the material - again, something I've never had an issue with, but then I don't use a net and obviously don't camp a lot of places with biting insects.

Placing the pad between layers also helps keep it in place better than just laying on top of it in a single layer. A little more comfy too.
They do support weight but also add to it, the only reason I would have one is for the purpose shotgunred explained for the pad use if I did not use UQ. They would also help with biting bugs but if its buggy out I would figure one would have a bug net, and a pad or some type of UQ to prevent the biting unless its really hot out at night in which if its that hot I don't enjoy being out, I would say more of a cooler weather hammock IMHO
