The main thing is if it shows you weight in ounces & grams. depending on how accurate you want to be, you might want one that also shows in tenths and hundredths of ounces/grams. I would recommend the later in grams
Get something with a tare function
Just remember.Ounces add up to pounds. I am no expert but It is fun to see how a little here and a little there add up.
Use http://www.geargrams.com to add everything up and then a good electronic scale from the cooking department at Wallyworld will do just fine. Like the others said, tare function and ounces/grams option is all you need. Should be under $30 for one that will get done everything you need.

Been using this scale for awhile now..This thing is awesome...Very accurate..
I go to the post office late at night. I'm sure they have cameras there and must be wondering what I am doing.
