How much do I roll under to hem
Whatever is easy for you to work with. Generally, fold over 1/2" and then another 1/2" and sew as shown in the instructions.
Ok the tarp I want to make has a couple of radius's in it I didn't no if need to just leave them alone or hem them it will be my first tarp I have ever made just don't want to mess it up
It's not clear to me what you mean by 'radius's'....
GMCTTR was pretty clear - 'hem all the way around the perimeter'.
There are no un-hemmed exposed edges in well-made gear.
The amount (width) you turn over for a hem can vary. I'd consider 1/2" + 1/2" to be quite wide. I generally turn hems 5/16" or 3/8". This would correspond to a (standard) 5/8" or (larger) 3/4" seam allowance.
The wider you make the hems, the more problems you will have with puckering & rolling on curved sections like the caternary curves on tarp edges. YMMV, of course.
Have you seen the hex tarp at DIY gear supply its the cut outs that I'm talking about it

Ok they are called catenary curve depth
As VictoriaGuy stated, a narrower roll hem will help on cat cut edges.
As always, use some scraps of the tarp material to be sure your sewing machine is set up correctly (stitch length, thread tension) and to practice the seams and hems you will be using.
