I built a 12.5 foot yatch/hammock. Super comfortable but too long. I want to take a foot off. Instead of cutting it, totally viable to simply tie a knot in it to take up the 12 or so inches I want to loose?

I did, eventually that might weaken the fabric so that you can't go back, but you can always go shorter.
12.5 foot with my 6'2" 325 body was SUPER comfy.
The problem is the engineering. Trees had to be further apart, not a biggy, I had to tie much higher to stay off the ground, annoying. To compensate for this I was finding myself pulling the whoopies super tight, basically making them inline with the SRL and this was putting so much stress on the toggles, that I broke one stick after the other. The stress on the knot of the marlin hitch was so high I was crushing sticks I could use easily with my 10 footer. Even bent a steal screw driver.
So I want to try 11 and see how that does.
I took a 11.5 foot hammock and added a sort of zig-zag fold about nine inches from the gather. Then I triple stitched and tossed another continuous amsteel loop through. So now I have a 9 foot / 11 foot convertible. I'll toss up some pics later if you want.
The only reason I didn't just snip off the excess when I was doing this was because I loved the length option idea. If I ever decide I need to shed an ounce, I can cut 'em off. until then, it makes for a unique hammock.
Dude there is a simple solution. Do a form of a sheet bend. Fold the sheet where you want. Then re-whip that end. For added security you can put a bunched up stuff sack balled up in the bend and whip behind it ensuring the hammock does not slip out the whip. Wala you have a shortened hammock you can test.

Or just make another hammock. That is assuming you made a basic sewn end channel type hammock. It won't cost that much to make another hammock body, use the old suspension and see how well you like the shorter approach.
YMMV
