I have a new cuben grizz beak by ZQ for a Hammock Gear cuben hex tarp.
At Spring MAHHA, you can look at it's dimensions; try it out on your new DIY tarp and compare the angles to your beak.
That may give you the insight to make adjustments on your grizz beak.

Nice job. Not sure why it flops as it looks tight inboard of the edge. That leaves me wondering of the panel is really flat or the edge stretched when sewing it.
Looked again, I think your problem is that the cat cut on the tarp is the source of your problem. The contact point changes along the edge as the panels are not on the same plane so the effective length of the contact point is not the length of the side of the beak. It's a complex geometry issue. A cat cut in the beak might solve your problem at the expense of a sealing issue where the deepest parts of the cat cut edges intersect. The whole thing leaves me thinking that I would not cat cut those edges if I make a hex tarp and plan on a beak. I also think adding a door now would not be simple. Maybe lesson learned.
On further consideration I might try clipping a dart or two in the edge of the beak and see what happens. Might be binder clips would be the tool of choice to try it.

Update, the cat cut helped a lot with the flop, it's not always really taught, but I have not had any flop since I made the cat cuts. I have to set it up again and take photos, I had it at MAHHA, but didn't take any photos (too busy talking and eating and napping). I took some photos on my scout campout, but it's not really a normal setup since I was hanging in a turtle dog stand. Here it is between rain showers.
