I'm working on my first DIY hammock, 1.9 double layer, and stitched my end channel with three rows. I then ran my whoopie sling through the channel and larks-headed the fixed end. Will this be strong enough? I'm 5'8" about 170.

Sounds like my wife's ENO Double. I removed the factory stock heavy carabiner and rope from the end channels and replaced them with whoopies. No problem. I use it occasionally and weigh much more than you.
But remember, never hang higher that you are willing to fall, nor over anything you are not willing to fall on.

I too have done this at 6'2" and 250 with my claytor. No problems. +1 on Rain Man's observation about willing to fall distance and upon what is under you. I never trust anything absolutely.

That's a pretty standard way of doing it.

I just ran whoopie slings through end channels on mine. Works like a charm and mine is also triple stitched.
On my two recent DIY hammocks, I used whoopie slings from whoopieslings.com. I triple stitched my end channels, just like you, and then put the whoopies through with a double pass before I did the larks head over the adjustable loop. Just felt like it might be a little more secure that way.
I also just started using whoopies on my Kammok Roo. I ordered 1/8 amsteel (b/c I'm a big guy and just wasn't sure I trusted the 7/64) and made my own whoopies, then double looped them through the end channels on the Roo before putting the adjustable end through the fixed loop. I've been in it several times and feel pretty safe.
