Is that an unnecessary step, or should I do it again for my next one?

I've made a half dozen hammocks and never cut off the selvedge. I just roll it into the hem and sew it up.
If your roll heming it,,no need to,,my company has sewn thousands of yards of tafetta and cloth over the years and works perfect..just one less step that is not nessesary to do. I know some might see if different as it just cleans the edge, however,,you have to cut it pretty perfect in order to get a square sewn product.

Use the selvage as a guide for the first fold of the hem. Then snug the second up to that edge. Real nice guide and very sturdy hem. No need to cut it off.

I do not chop off the selvage for equipment. However, if making clothing the selvage must go. Selvage is use in weaving the fabric, if it is left on while making a garment it can cause the fabric to do un intended things, such as pulling in an unwanted direction or wrinking into the seam. So if I am working on clothing, I first wash the fabric, then I place my pattern on the fabric, staying away from the selvage, cut the pattern out, throw away the selvage. Tarps and things like hammocks selvage is fine left in tact, it might even make the fabric less likely to tear out along its edges.
