How much more comfortable is a 11ft hammock vs. a 10ft? why? flatter lay?

You can get flatter in an 11' but obviously it takes more room. I wouldn't say you need it at 5'6" but you'd have to experience it.
I have an 11' in my outdoor stand but most of the time I'm using a 10' camping and in my indoor stand. The 11' creates tarp coverage issues too...
Oh, and I'm 6'1"

I don't know how much difference it makes with you being 5'6", and me being 6'2", but I love my 11' hammock. Tried a few different lengths and found this to have the best/flattest lay, FOR ME. If your going to make one, especially if it's a gathered end, you can always try 11' and then tie it shorter, and see if you like it, if not, the go back to the 11' .......RR. HYOH

I'm 5'10" and really like an 11' hammock. It isn't a huge difference and I still use my 10 footers (blackbirds mostly) but when there's a choice (like with BIAS, Dream Hammocks, etc.) I'll go with an 11 footer.

At 5'11", I prefer an 11-footer, but I don't have any complaints about my 10 footers either.
I'm 6' and find my 11 footer just right. I could not find my "right" spot in smaller hammocks like the WBBB or GTUL.
At over 6', I can definitely get more comfortable in an 11' hammock. But at your height, I suspect that it's barely noticeable.

I'm glad to hear the replies. I won't be second guessing my purchase. (Darien UL, 10ft)
I'm still curious and want to try an 11 foot hammock, but, that can wait til next month.
