The maps on the linvillegorge.net are the best. And there is going to be a Gorge Rat Gathering in May! ;)
Can't beat the Linvillegorge.net forum for info. So many trails to hike. I'm actually going there this coming weekend.
I'd suggest checking out rockjock trail.
Rockjock to Pinchin to LGT to Conley Cove makes a nice little loop.
But if you want the views go to Hawksbill or Table Rock. At Hawksbill you don't need a permit for camping. ;)
I have only been 2x, so I don't have a lot of info.
I agree with others that the people on the LinvilleGorge.Net are a big help, along with the GPS waypoints & maps.
I did a one nighter on the east rim (Table Rock to Shortoff). It would be a hot trail in the summer... but great views :)
