I keep my food in a bear bag in a storage area at the foot end of my hammock, so all I have to do is sit up, reach over, get it out & lay back down....

I'm not as young & fit as you Sarge. If I hang 3" off the ground, my... uh, belly muscles make it a chore to get up:eek::rolleyes:
On the height I choose... I generally like it just a little lower than a normal chair height... still good for sittin, & good for reaching stuff too.
I choose "far trees, low hang".
If the trees are farther apart, I swing longer & don't run into issues w/ the tarp fitting (slightly longer than the hammock), & I have room to choose/change hammock...
