I would recommend having a structured ridge-line as it helps keep the sag consistent and takes pressure off the hammock if not hung quite correctly.

You should be able to reattach the grommets or replace them with larger ones but a properly rated top and bottom quilt should take care of the need for the cover in the first place.
Yep, if the insulation can't breath then there's no place for the ever present condensation to go.
Any non breathable insulation layers spells trouble when camping in cold damp weather. Do yourself a favor and get a down top and bottom quilt and you'll eliminate all but the worst of hanging...
Are you car camping or backpacking? If car camping you can take anything you need, ie covers from your bed, electric blanket if the site has power, heaters, etc.
Shouldn't hurt as long as they aren't metal.
Time for some real insulation. A good top quilt and full length winter rated under quilt will last you a lifetime.
Goose can be made to taste very good provided you marinate it properly :) A full tummy makes it easier to sleep as well.

I don't use trekking poles as spreader bars and the extra weight doesn't both me but I'm not longer a long range hiker either. Six to 8 miles a day and I'm happy in my RR :)
