I think you'd be fine in a Notch. I'm 5'11" and used a Large Therm-a-Rest NeoAir XLite pad (REI Garage Sale find). And I had plenty of room at either end.

I would think around 60deg F would start to be to warm, but it has a pretty wide range as you can always stick a foot out or adjust base layers.
