You might check out Linville Gorge. Shug has done backpack trip videos there, but there also roads on each side of the gorge with primitive camping areas.

I have started using a piece of Tyvek for the ground and put my boots on it. Isn't critter proof, but keeps them off the ground and I can stand on it in rainy situations.

I've done an overnight in Zaleski, which was nice. But that was a few years ago. Wanting to get some time down on the AT as well, one day. :)
