Tape really isn't any lighter than a light zipper...that and I HATE the velcro noise!
As far as using a full drawstring entry/exit, that's basically the difference between Jeff's "hammock sock" and his/Risk's "travel pod". I currently use a sock (drawstring entry) for winter trips. The biggest advantage I can see with a zipper, other than ease and convenience, is that it's probably lighter because it allows you to form-fit the bivy material. I haven't tested this myself yet, but I'd bet you'd lose more weight by trimming the material than you'd gain by adding a zipper. I guess you could accomplish the same thing with some form of velcro, but again I HATE velcro
