Both hammocks are excellent for your size. You're at that "in between" size that guys like me envy (short and stocky). A little tall. A little slim. Any hammock would be great for you because of this.
Due to this, I definitely think you'd have more of a "wow" factor in a WWM. If you were 195-210, either would work but I'd recommend moving to the Hiker Lite because of its increased thickness and durability. But that's, as you said, about six extra ounces in a double layer and you don't require it -- unlike a guy like me.
One day you'll get an underquilt. Everyone does if they're in it for the long haul. But until that day comes, a pad will be horrible in a single layer. The cost of a double layer is cheap by comparison and the increased durability is nice. Yes, later it's more weight, but when you're ready for the underquilt, you'll find a buyer for your DL hammock.
So at your height/weight, a 56 WWM would be perfect. DL? I lean toward yes, but would love to hear what others think. You gotta have something to keep your back warm and a squirmy pad in a SL hammock is the pits.
