The quilt that works the best for me (my 3/4 quilt) has channels on the long edges of the quilt and the shock cord suspension for the UQ runs through the channels from one end of my hammock to the other, allowing me to scoot the quilt back and forth along the shock cord. So I suppose those edges are not really elasticisied (still can't spell that).
You could put channels on the edges and add elastic that way (you can leave an opening in the channel somewhere and have a toggle adjustment) or you could - if you are sure how much elastic to use and how tight to make it, sew it directly to the edges of the quilt.
I'd use channels and shockcord and a toggle, myself.
