I would think the parachute nylon, such as most commercial gathered-end hammocks are made of, would be good. It's what I use most of the time in my backyard in the heat.

Get a quality Mayan with thick cotton weave. Hamacas Rada is where many of the Mayans you'll see for sale come from. Often at upwards of 200% mark-up. Their thick cotton hammocks would be just the ticket for a backyard rig and the price is nice at $39.99.
I've got a couple of their hammocks purchased direct and I've been very happy with them. Great summer hammocks in the yard.

I have a diy whipped end that is made with ripstop that is a little heavier than I would like to backpack with. It is really comfy but does not breath. I am looking for something non stretchy and breathable I can whip myself. I had thought about buying a Brazilian style hammock but I like making things.

Try a king size sheet or similar material to get the length you want. Cotton would breathe the best. I've built a few now and about the only thing I check for at the store when purchasing fabric, is that its not too stretchy. I grab the fabric and give it a good pull, if its not too stretchy and I like the color, I get it.
The only warning about cotton is don't leave out in the sun. The thin nylon works well, too. I get plenty of air flow thru any of my single layer hammocks
If heat is the problem wet the hammock a little with a spray bottle, and then lay down. Evaporation is very cooling.
