I'm a bigger guy, and I like the 1.7 for two reasons: 1. I have the ability to put a pad or insulation in the pocket. 2: I like having a little more support under and around me. If you counting grams, go with the 1.1. I also like the idea of having some more "ground cloth" under me if I have to use it as a bivy is sparse conditions. I like the 1.7 just a personal choice. Also - the occupant weight capacity is usually higher in the double layer - how much depends on what hammock you are looking at.
For instance, with the Warbonnet Blackbird, the double layer 1.7 is rated at 125 lbs higher than the single layer 1.7.
In the Warbonnet Ridgerunner the difference is 50 lbs.

yeah the Black Bird Double 1.7 is 400lbs and the 1.1 is 275lbs. I am willing to give up the 125lbs if its worth it I weight 200lbs so should be fine in the 1.1 Double.
It really depends on your weight. If the fabric isn't going to hold you, no sense getting it. After that you have to debate weight vs comfort. Myself? I like my comfort. I'd rather carry some extra oz than go without some comfort.

If your intention is backpacking with it, and you fall well under the weight limit for the 1.1 DL, then stick with 1.1. No question.
It depends if you like your hammock to be stretchy or not. I have both, the 1.1oz DL and the 1.7 DL, and although I'm only ~140 lbs, I like the 1.7oz DL better because it has a bit less stretch and I don't like stretch. It's not enough to make me carry the 1.7oz DL when hiking, but if I would weigh 200 lbs, I would probably be tempted to go with the heavier option.
I agree that you should consider the stretch. I have a 1.1 DL Blackbird and 1.7 SL XLC, and, while both are comfortable, I like the stretch of the 1.1. Should have gotten the 1.1 DL layup in the XLC.:/
