I can personally recommend Grayton Beach Florida State Park and Big Lagoon State Lagoon. Big Lagoon isn't technically on the beach: it is on the Intercoastal. It has plenty of trees for hanging (and shade).

Gulf Islands National Seashore across the sound from Pensacola is awesome.

The beach and campsites are wonderful but there is also a fort there that once imprisoned Geronimo.

The Blue Angels flight team might be practicing overhead and one can hear morning calisthenics from the base across the water.

Put your food up at night or the raccoon will eat it!

This is a good review of Florida beach camp spots. Many of them are in northern Florida if that is what you are looking for. I am going to Cayo Costa on Monday and it is a great place if you are willing to come this far south.
