I agree with Shug, but really you should just get a 20. In the end it will be cheaper and will take you lower or give you a warm buffer. You can always vent to make it cooler by loosening the quilt.

If you want a true 30deg quilt you need to talk to adam and order it as a 30 deg, so that the baffle height is increased. That is what really affects the temp rating.
HG will build you one if you ask. I don't know why they don't offer 30° and 10° on the site because I have read of quite a few people who ordered those.
If you look at the details of their incubators it appears each 10 degrees adds 4oz more down BUT as mentioned in order to get the full benefit of that much added down it should really go into the quilt made with the correct baffle height of the lower rated incubator.
I looked at this with a Phoenix. If you get a Phoenix 40 with 2 ounces of overfill, if you request it, they will design the baffles for a 30 degree rating at no charge. This is a great customer service, if you ask me.

And also agree with Tree Frog. Take the lowest temp you will be in and add a 10* buffer. So if you are planning to only go to 40* then the 30* quilt is perfect but if your planning for 30* temp go with the 20* quilt.
In the end do whats right for you

I attached a note to HG when ordering a 40° Incubator with 2 oz overstuffing. I received in the mail (5 days after the order was placed) an Incubator with a "30° Custom" tag on it.
They sure do aim to please!
Note: I believe you must ask about the specific temperature you are aiming for. All my other +2 oz overfills have the "standard" temp rating without the custom tag.
