If there is a bear in France or in central Europe, I'd be surprised.There are a few bears on the border of France and Spain but they're near extinction.

Only if you're tastey?
There are both (bears and wolves) in Eastern Europe, and historically european wolves were much more aggressive towards humans. In modern times however there is little risk of a wolf attacking a human, and the same goes with bears. Attacks are extremely extremely rare.
They're no more dangerous when hammocking than when sleeping in a tent, hiking, or any other outdoor activity so long as you observe a few precautions. Maybe check the stats on attacks for a particular area if you're really worried but I'm always more concerned about the 2-legged predators than anything with 4.
Hammocks rarely pose more of a threat from wildlife than tents, bivies, etc. I think the biggest difference with hammock is our ability to set up in more varied places. It can be an issue when you set up right on top of an animal trail and have a deer crash into your tarp at 5 am while you're sleeping soundly. I hear moose can be a lot more painful if that happens.

Chicago Bears and Chicago Wolves don't have any away games in Europe so I think you are safe.
Get lost in the woods and find yourself again. A vacation,to me, is working with your hands and surviving because of the fruits of your labor. In the business world I teach;in the natural world I learn.
When living in B.C. we sometimes have wolf sightings, the wolves stay as far from humans as possible.
It is the moose I worry about they just plow through whatever is in their way. Just a tiny bump from moose antlers is very painful.
