After being confused, I called Paul at UGQ and he helped me out a lot. Here are the main takeaways and what I ended up ordering:

1) 30* TQ with a 20* UQ is fine for most situations if you are not winter camping.
2) Most people order the drawstring bottom but probably never use it. He recommended the sewn flat footbox. If its really cold, I have down booties I can bring, but I doubt I will need them.
3) Full Taper. I told him I hate sleeping bags because of the locked in feeling. He said full taper was still the way to go for a hammock and it wouldn't feel confining. I was surprised by his answer, but he was confident this was the way to go.
4) 50" width is plenty for hammocks
5) 800 fill. Not really worth the extra cost for minimal weight savings at 30*.

I went with M10 inside and out.

Its on order and should be ready in the next few weeks. Next trip is in June, so no worries with timing.
