Knots: What's the difference?

So I've been using the Siberian/Evenk Hitch because it comes apart easily. I have been trying to teach myself the Marlin Spike Hitch, and I can't see how it differs from the Siberian hitch, except that the Siberian Hitch replaces the spike with a tree.

I've always struggled with knots, so I apologize for consuming your time with a simpleton's question.

With the Marlin Spike Hitch, you pull the toggle and the knot falls apart. With the Siberian Hitch it appears you pull the slippery end of the knot to untie it. The former is easy to tie with a strap and releases easily. I do not know how well the Siberian works with straps.
